Gluten-Free Christmas Cake

Ingredients:

  • 200g of almond flour
  • 150g of coconut sugar
  • 4 large eggs
  • 100g of unsweetened applesauce
  • 1 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground nutmeg
  • 150g of mixed dried fruits (raisins, cranberries, etc.)
  • 50g of walnuts, chopped
  • 1 teaspoon of vanilla extract

Kitchen Tools Needed:

  • Oven
  • Mixing Bowl
  • Spatula
  • Cake Pan

Instructions:

  • Preheat the oven to 180°C (350°F) and grease a cake pan.
  • In a mixing bowl, combine almond flour, coconut sugar, baking powder, cinnamon, and nutmeg.
  • In another bowl, whisk together the eggs, applesauce, and vanilla extract.
  • Gradually add the wet mixture to the dry ingredients and mix until combined.
  • Fold in the mixed dried fruits and chopped walnuts.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  • Let the cake cool before serving.
